Jacapo’s Ragu

For 10 people.

What I used:

  • 2.5 kg of penne
  • 600 g of minced beef
  • 5 X boxes of passata (500g each ca)
  • 2 onions
  • 1 carrot
  • 2 sticks celery
  • 1 bottle of red wine
  • parmesan cheese (300 g ca)
  • salt, pepper, olive oil.

What I did:

  1. heated olive oil in a large pot
  2. added slices of onion and shortly after
  3. added chopped carrot and celery
  4. fried gently for a while
  5. added the minced beef
  6. put in pepper
  7. stirred to break minced beef into smaller chunks
  8. cooked until the meat was browner
  9. added red wine
  10. added some passata and some more later
  11. stirred at lot for about 1 hour
  12. grated mature cheddar
  13. boiled water
  14. added salt
  15. added penne
  16. joined the two at the end
