Banana and Coffee Trifle

Ingredients (for one large trifle):

1 pack trifle sponges
1 cup very strong coffee
6 bananas
1 large pot good quality fresh vanilla custard
1 large pot double cream
1 small pack flaked almonds

Put the trifle sponges in the bottom of a large bowl, and pour most of the strong coffee over them. Cover with a layer of chopped banana. (Save one banana for decoration) Mix some strong coffee into the custard, and pour over the bananas. Whisk the cream to a thick texture and spread over the custard. Leave to set in the fridge for a few hours. Before serving, decorate the trifle with chopped banana and flaked almonds.

Chocolate Cherry Trifle

Ingredients (for one large trifle):

1 pack chocolate muffins or brownies
Cherries (either 2 packs of fresh cherries or 1 bag of frozen cherries, defrosted)
1 large pot good quality fresh vanilla custard
1 large pot double cream
2 slabs dark chocolate

Put the muffins/brownies in the bottom of a large bowl. Cover with a layer of destoned cherries. Save some cherries for decoration. Melt 1.5 slabs of chocolate in a bain marie and mix with the custard.  Pour the chocolate custard over the cherries. Whisk the cream to a thick texture and spread over the custard. Leave to set in the fridge for a few hours. Before serving, decorate with cherries and the remaining chocolate, grated. Optional extra: you can put some amaretto in the cream for a boozy trifle.
